These Protein Trail Mix Cookies are light goodies that can triple as a light snack, healthy portable breakfast or a sweet ending to a meal when your sweet tooth hits!

Ingredients
  • 2 ½ cups rolled oats
  • ¼ cup powdered peanut butter
  • 2 scoops Vi-Shape
  • 1 tsp baking powder
  • ¼ tsp cinnamon
  • ¼ tsp sea salt
  • 3 large, very ripe bananas, peeled
  • 1 tbsp melted coconut oil
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • ¼ cup trail mix and chocolate chips to mix in and for toppings
Instructions
  1. Mix the wet ingredients in a large bowl, making sure to remove any clumps
  2. Mix the dry ingredients in another bowl
  3. Stir in trail mix evenly
  4. Scoop about 2 tablespoons of cookie batter onto parchment paper, add additional toppings if you’d like
  5. Bake at 350F for 12-15 until golden brown
