This strawberry banana protein bread is bursting with fresh berries and sweet bananas. It's the perfect dessert to eat after dinner!

Ingredients
  • 2 cups oat flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¼ cup Vi-Shape
  • 3 large over-ripe mashed bananas
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup Greek yogurt
  • 1 cup strawberries, diced and more sliced for topping
Instructions
  1. Mix the dry ingredients in a large bowl (flour, baking powder, baking soda, Vi-Shape, salt & sugar)
  2. Mix the wet ingredients in another bowl (brown sugar, bananas, egg, vanilla extract, yogurt & strawberries)
  3. Combine dry & wet ingredients well || Scrape into a greased loaf pan
  4. Bake at preheated 350F for 1 hour or until toothpick inserted in center comes out clean
