These Chia Banana Walnut Protein Muffins are the perfect nutritious snack for breakfast, or even after a workout. They're packed with rich flavor, protein and healthy essential Omega-3 fats. This recipe is simple, healthy and delicious with a kick of Cinnamon!

Ingredients
  • Dry -
  • ¾ cup almond flour
  • 2 tablespoons coconut flour
  • 2 scoops of Vi-Shape Shake Mix
  • 2 tablespoons Chia seeds
  • 1 teaspoon cinnamon
  • ¼ teaspoon aluminum-free baking soda
  • ¼ teaspoon sea salt
  • Wet -
  • 1 large ripe banana, mashed with fork
  • 1 cage-free egg
  • 1 tablespoon coconut oil, melted
  • 1 tablespoon wild honey (optional)
  • 2 tablespoons full-fat coconut milk
  • ½ teaspoon real vanilla extract
  • ¼ cup chopped walnuts, or nuts of choice
Instructions
  1. Preheat oven to 350 degrees. Grease and line muffin pan.
  2. Combine dry ingredients in bowl and break up any lumps. Then whisk wet ingredients in separate bowl until smooth. Add wet ingredients to dry and combine thoroughly.
  3. Fold in chopped walnuts and/or sprinkle on top.
  4. Using an ice cream scoop, distribute ~2 tablespoons of batter per muffin. Smooth tops with rubber spatula, batter will not rise.
  5. Bake for about 20 minutes, until golden brown and cooked through.
  6. Recipe makes 6 muffins.
