Waking up to the smell of warm blueberry protein muffins is a great way to start off your morning. Antioxidant-rich blueberries shine in our muffin recipe, and are a good source of fiber and an excellent source of Vitamin C.

Ingredients
  • 4 scoops Vi Shake Mix
  • ⅓ cup Greek yogurt
  • ½ cup almond milk
  • ⅓ cup unrefined sugar
  • 1 egg
  • ¼ cup olive oil
  • 1 cup rolled oats, gluten free
  • 4 Tbsp dark chocolate chips
  • 1 cup of Blueberries
  • 2 tsp baking powder
  • 1 tsp baking soda
Instructions
  1. Preheat oven to 350F degrees. Line muffin pan with muffin paper liners.
  2. In a large bowl, with a wire whisk, combine all ingredients.
  3. Fill paper liners ⅔ of the way and sprinkle the remainder Blueberries over each muffin.
  4. Bake for 22-24 minutes or until a tester comes out clean.
  5. Remove muffins from muffin pan and cool completely on a wire rack.
  6. You may freeze these for future consumption if you like.
