Ingredients
  • 1 tablespoon sugar
  • ½ teaspoon cinnamon
  • 1¼ cups all-purpose flour
  • ⅓ cup sugar
  • 2 scoops of Vi-Shape
  • ½ teaspoon salt
  • 1 tablespoon baking powder
  • 1 cup of Bran
  • 1¼ cups skim milk
  • 1 egg
  • ¼ cup vegetable oil
Instructions
  1. Preheat oven to 350°F
  2. In a small bowl, combine 1 tbsp sugar and cinnamon.
  3. Set aside.
  4. In a medium bowl, stir together flour, ½ cup sugar, salt and baking powder.
  5. Set aside.
  6. In a large mixing bowl, combine Bran, Vi-Shape, and Milk.
  7. Let sit for about 2 minutes.
  8. Add egg and oil.
  9. Beat well.
  10. Add flour mixture to Bran mixture and stir just until combined.
  11. Scoop into lined muffin cups.
  12. Sprinkle evenly with Raisins.
  13. Bake for 25 minutes.
