  • ⅓ cup Greek yogurt
  • ⅓ cup cane sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup milk
  • 1 cup whole wheat white flour
  • ½ cup rolled oats (ground into flour)
  • 1 scoop Vi Shape
  • 1½ tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ tsp salt
  • 8 tsp Nutella
  • Cinnamon Sugar Topping:
  • Mix melted coconut oil
  • ¼ cup cane sugar
  • 2 tsp cinnamon
  1. Blend wet ingredients (first 5) together in a large bowl with hand blender until smooth
  2. Mix dry ingredients (next 7) in another bowl
  3. Gently stir in dry ingredients but do not over-stir
  4. In parchment paper-lined muffin tins, spoon 1 large tbsp of batter, followed by 1 tsp Nutella in the center and topped by another large tbsp of batter
  5. Repeat for 8 total muffins
  6. Fill the empty muffin tins halfway with water for even baking
  7. Bake at 425F for 5 minutes. Keeping the muffins in the oven, reduce temperature to 350F and bake for an additional 13-17 minutes until batter is set. Allow muffins to cool for 5 minutes
  8. Dip top of each muffin into the melted coconut oil and dip into cinnamon-sugar mixture!
