This Raspberry Coconut Protein French Toast is a fruity twist on an old favorite that’s guaranteed to “wake up” your taste buds!

  • 6 slices day old sourdough bread
  • ⅓ cup coconut milk
  • 2 eggs
  • 1 tsp cinnamon
  • 2 tbsp Vi-Shape Nutritional Shake Mix
  • 2 tsp coconut oil, divided
  • Toppings:
  • Add raspberries, chocolate syrup, maple syrup and coconut flakes
  1. In a shallow wide bowl, whisk together eggs, milk, cinnamon and Vi-Shape Nutritional Shake Mix
  2. Melt half the coconut oil in a pan over medium high heat
  3. Soak 3 slices of bread into the milk/egg mixture, then add bread slices onto the hot pan and cook on both sides until browned
  4. Repeat with remaining coconut oil and 3 slices and serve with favorite fruit/toppings
