  • 2 cups strawberry halves
  • For the Almond Cakes
  • ½ cup almond meal
  • 1 egg white
  • ½ Tbsp coconut oil
  • 1 tsp vanilla extract
  • For the Cream
  • 1 cup light cottage cheese
  • ⅛ cup skim or almond milk

  1. Top almond cakes with strawberries and drizzle with cream.
  2. For the Almond Cake - Preheat oven to 350 degrees.
  3. Mix together almond meal, egg white, oil and vanilla.
  4. Split into 4 portions and place on a baking sheet lined with parchment paper.
  5. Bake for about 10-12 minutes until firm to the touch.
  6. For the Cream - Blend together cottage cheese, Vi-Shape and milk until smooth.
