Ingredients
- 1 tablespoon sugar
- ½ teaspoon cinnamon
- 1¼ cups all-purpose flour
- ⅓ cup sugar
- 2 scoops of Vi-Shape
- ½ teaspoon salt
- 1 tablespoon baking powder
- 1 cup of Bran
- 1¼ cups skim milk
- 1 egg
- ¼ cup vegetable oil
Instructions
- Preheat oven to 350°F
- In a small bowl, combine 1 tbsp sugar and cinnamon.
- Set aside.
- In a medium bowl, stir together flour, ½ cup sugar, salt and baking powder.
- Set aside.
- In a large mixing bowl, combine Bran, Vi-Shape, and Milk.
- Let sit for about 2 minutes.
- Add egg and oil.
- Beat well.
- Add flour mixture to Bran mixture and stir just until combined.
- Scoop into lined muffin cups.
- Sprinkle evenly with Raisins.
- Bake for 25 minutes.
