These Protein Trail Mix Cookies are light goodies that can triple as a light snack, healthy portable breakfast or a sweet ending to a meal when your sweet tooth hits!

Ingredients
- 2 ½ cups rolled oats
- ¼ cup powdered peanut butter
- 2 scoops Vi-Shape
- 1 tsp baking powder
- ¼ tsp cinnamon
- ¼ tsp sea salt
- 3 large, very ripe bananas, peeled
- 1 tbsp melted coconut oil
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- ¼ cup trail mix and chocolate chips to mix in and for toppings
Instructions
- Mix the wet ingredients in a large bowl, making sure to remove any clumps
- Mix the dry ingredients in another bowl
- Stir in trail mix evenly
- Scoop about 2 tablespoons of cookie batter onto parchment paper, add additional toppings if you’d like
- Bake at 350F for 12-15 until golden brown
